Zucchini Muffins

Zucchini Muffins!
(The uncontested best recipe ever)

  • 2 c. sugar
  • 1 c. oil
  • 3 tsp. vanilla extract
  • 3 eggs
  • 1 c. walmuts
  • 3 c. flour (1 ½ c. white flour, 1 ½ c. whole wheat flour)
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3 c. shredded zucchini, squeezed dry
  • 1 tsp. cinnamon

Mix the sugar, oil and vanilla together.  Beat the eggs together and add them to the mixture.  Combine the flour, salt, and soda.  Add them to the mixture.  Add the remaining ingredients (nuts, cinnamon, zucchini), mixing well after each addition.

For bread: Pour the batter into two well-greased loaf pans and bake for 1hr. and 20 minutes at 350.

For muffins: Use paper liners.  Fill muffin cups 2/3 full and bake at 350 for 10-20 minutes.  As my mother would say, just bake them ‘til they’re done!

These are a healthy(er) alternative to cupcakes – and they are DELICIOUS.  My brother even loves them – and he hates any food that is green, or that grows in the ground.
